Berry Cobbler

One 9 X 9" cobbler

Berry Mixture:

5-6 cups fresh or frozen berries..I used strawberries, blueberries, and peaches

1/4 cup whole wheat flour....I used gluten free

1/2 cup sugar

Topping:

1 cup whole wheat flour...I used gluten free

2 T. sugar

1-1/2 tsp. baking powder

1/4 tsp. salt

2/3 cup milk....I used coconut

Preheat oven to 375 degrees.

Spread berries in a 9X9" greased baking dish. Mix in flour and sugar. Place in oven until hot, about 15 mins.

To prepare topping, mix flour, sugar, baking powder, and salt in a bowl. Add milk and stir until batter is smooth.

Spread evenly over hot berries (don't worry if they're not completely covered), then bake until golden brown, 25 to 30 mins. **I baked our's for about 40 mins.**

Meet Chloe and Taffeta!!

Today, was getting back into the Goatie World....cleaning and organizing the barn for our new arrivals that came this afternoon! Chloe is on the left and Taffeta is on the right! Now these girls come from very pure breed Pygmy stock, but we don't care anything about that, we just wanted some fun, happy, and adorable little friends to love on, and that is exactly what we got. Their previous Mama which was Jill was looking for a wonderful home for them, because they can't be bred anymore, as their last pregnancies didn't go so well!

Chloe is 7 and Taffeta is 6 yrs. of age. We just love how calm and sweet these girl's are.....we are very lucky to get them!

Here's Chloe, hopefully we can get some other photo's soon of them not behind the panel....they were kinda checking out everything going on today.

Enjoying their first dinner and did I mention they love animal crackers...he he.....go figure! :) I am so looking forward to some new and fun adventures with them....I love you girls and we just met! Hugs!

Broccoli Bake...A Recipe!

Broccoli Bake

12 oz Broccoli Florets

4 eggs

3/4 cup grated Veggie Mozzarella Cheese, or whatever kind you like

1/2 tsp Salt

1/2 tsp Nutmeg

1/2 tsp Mrs. Dash Spicy Seasoning

1 T. Coconut Oil

2 cups Coconut Milk, or whatever kind you like

Preheat oven to 350 degrees. Get out a square baking pan or round pie dish, and liberally grease with coconut oil. Microwave the broccoli till just tender, 4 mins. Mix together milk, eggs, cheese, salt, nutmeg, and Mrs. Dash till well mixed. Then add broccoli in and pour mixture into pan/dish. Bake til knife comes out clean, and cool slightly before serving.

Bake for about 30 - 40 mins. I enjoyed mine with A LOT of salsa....lol!

Winter Road Trip!

This afternoon, Cliff and I decided to take a ride to our local

ski lodge (Clearfork) that just opened back up after being closed

for 5 yrs. The new owner's put approx. 55 million into this new adventure. So, in other words....they need....SNOW!!! I was also

trying out my sister's camera to see if I would like it or not....I'm

getting ready to be in the market for a new one...yippee!!

First town up, was Bellville, Ohio. This was there gazebo in the

middle of town....cute!

At the resort in Butler, Ohio....and making SNOW!!

Making more....SNOW!!

They have a couple of beautiful ponds there!

The new lodge....see what 55 million looks like...he he!

And...yep...you guessed right...making more SNOW!!! lol!

Cheesy Potato Soup....Anyone!!

This recipe comes from Betty Crocker: Slow Cooker Cheesy Potato Soup

The link is here. I didn't use my slower cooker, I just through everything in a pot and heated it up! Worked like a charm.....Mmmmm!

1 bag (32 oz) frozen southern-style diced hash brown potatoes, thawed

1/2 cup frozen chopped onion (from 12-oz bag), thawed

1 medium stalk celery, diced (1/2 cup)

1 carton (32-oz) Progresso chicken broth

1 cup water

3 tablespoons Gold Medal all-purpose flour

1 cup milk

1 bag (8 oz) shredded American-Cheddar cheese blend (2 cups)

1/4 cup real bacon pieces (from 2.8-oz package)

4 medium green onions, sliced (1/4 cup)

In 3 to 4 qt. slow cooker, mix potatoes, onion, celery, broth, and water.

Cover, cook on low heat setting 6 to 8 hours.

In small bowl, mix flour into milk, stir into potato mixture. Increase heat setting to high. Cover, cook 20 to 30 mins. or till mixture thickens. Stir in cheese until melted. Garnish individual servings with bacon and green onions. Sprinkle with pepper, if desired.

**Pam's notes: I used coconut flour for the flour, coconut milk for the milk, and Galaxy Veggie cheese shreds for the cheese, and I added some Tabasco sauce.**

As I sit here doing book work for our business, listening to Loreena McKennitt: the book of secrets (love her), I glance out the window and see big beautiful flakes of white stuff falling down...yes....SNOW! I find in my heart I want for nothing, only gratitude fills my heart with love, joy and the knowing of this.

Three Raw Treats

Hello Everyone, Wishing you all safe blessings if you are in the path of Irene! A couple days ago, I was in the mood to throw together some goodies for us to munch on. First up, was Chilled Raw Chocolate Fudge, the recipe came from here. Up next is the Crumbly Crust Balls, at least that's what I call them and this recipe is adapted from Heathy's Peach Cobbler Crust recipe here. What I did was take 2 cups pecans, 1/2 cup coconut, 1/2 cup dates, pinch of salt, added some raisins and dark choccie chips. Process all in food processor and roll into balls...really good. And lastly, Snowballs....Combine 1/2 cup each of whatever you like, I used pumpkin seeds, sesame seeds, almond butter, honey, sunflower seeds, raisins, dates. Once combined, make into balls and roll in coconut.....really easy! In the tall glass are the Snowballs and the little glass is the Crumbly Crust Balls!

Almond Oatmeal Chocolate Chip Cookie Bites

Adapted from Elana's Pantry

2 ½ cups Trader Joe's almond meal
3/4 cup old fashioned oatmeal, ground fine in blender or food processor
½ teaspoon fine sea salt
½ teaspoon baking soda
½ cup grapeseed oil (I used olive oil)
½ cup pure maple syrup
1 tablespoon pure vanilla extract
3/4 cup dark chocolate chips (such as Ghiardelli 60% Cacao)

In a large bowl, combine almond flour, ground oatmeal, salt and baking soda
In a medium bowl combine grapeseed oil, maple syrup and vanilla
Stir wet ingredients into the almond/oatmeal flour mixture until thoroughly combined
Fold in chocolate chips
Spoon 2 tablespoons of dough onto a parchment lined baking sheet, press down to flatten
Bake at 350º for 7 to 10 minutes, until lightly golden
Cool cookies on the baking sheets for 20 minutes, then serve.

No-Bake Blonde Coconut Macaroons

3 cups coconut flakes
1 1/2 cups almond flour
1 cup maple syrup
1/3 cup coconut oil, melted
1 tablespoon vanilla extract
1/2 teaspoon salt

Mix all ingredients together well. Form into balls and refrigerate until firm.....I actually freeze them! When we make these they are gone in a few minutes because they are soooo good!

Hi, I know..I know...are you crazy, WHO eats grilled cheese in the summertime...I do...lol! I went out and picked our first tomato from the garden and I love them on my sammie. I also made this gluten free bread yesterday....so good! Come on......just try it...you might like it...ha!

Another photo for you to drool over! Hubby and I don't do so well eating regular cheese, so we use the veggie kind and it works out very well.

We were so excited, also out of our garden came these two lil guys...yummy cucumbers!

Averie's Banana Oat Cake with Peanut Butter

Happy July to ya all and I hope you had a great 4th! Here is a quick, simple, and easy snack. The recipe comes from Averie....thank you girl! Her blog is here. The recipe goes like this...

Microwave Banana Oat Cakes
(Vegan & GF)
1/2 Banana, mashed
3 Tbsp Dry Whole Rolled Oats
1 Tbsp Brown Sugar (omit or reduce, use white sugar, or use stevia, if desired) (I use one packet of stevia)
1 Tsp Cinnamon (or use pumpkin pie spice)
Optional: 1/2 Tbsp Chia Seeds (or use ground flax, or omit)
Optional: 1 Tbsp Dried Coconut Flakes
Optional: 1 Tbsp Cocoa Powder for Chocolate Banana Oat Cakes
Yields 1 oat cake but you can double the above recipe and microwave half the mixture in one bowl, half the mixture in another bowl, for 2 oat cakes
Mash Banana, Combine & Stir All Ingredients
Spray down a clean bowl or dish with cooking spray or nonstick spray.
Transfer the mixture into the sprayed bowl and microwave for 90 seconds.

Remove from the microwave and just wait a minute or two for it to cool and firm up a bit.
And then, it will pop right out.

I smeared peanut butter on mine like Averie did....yum yum!!!

Hungry Girl's Crazy-Good Corn Chips

Howdy! Are ya ready for a salsa-type day? These chips were really easy to make and yummy! Please give them a try and let me know if ya did!

Two 6-inch corn tortillas
1/8 tsp. salt

Preheat oven to 400 degrees.

Cut each tortilla in half. Cut each half into 3 triangles, for a total of 12 triangles.

Spray a baking sheet lightly with nonstick spray. Place tortilla triangles close together on the sheet.

Cover triangles with a 1-second spray of nonstick spray (optional). Evenly sprinkle with salt.

Bake in the oven until crispy, about 8 minutes, carefully flipping about halfway through bake time.

MAKES 1 SERVING

Please serve with salsa.....yep! Could make it fresh if ya like!

The 15" PB Cookie!

Hi Peeps! Happy Monday! Over the weekend, hubby and I wanted some cookies, so he suggested one BIG cookie...lol! This was the biggest cookie I had made before and it was so good! I had to double the normal recipe to get enough dough to fit into the pan.

2 cups Peanut Butter (I used 1 cup peanut butter, 1/2 cup sun butter, and 1/2 choc peanut butter....didn't have enough of just peanut butter)

2 eggs, beaten

2 cups organic sugar

Throw it all together and press into the sprayed pan. Bake 350 degrees for about 21 mins.

Banana Oat Cake

OMG, did I find an easy and yummy treat for you! It comes from Averie's here. It is a Microwave Banana Oat Cake....so tasty! Thank you Averie!

Microwave Banana Oat Cakes

1/2 Banana, mashed

HG's Waffle 'wich

Happy Sunday to you all! The sun is partially out and it is HOT! My favorite weather is 70's, light breeze, and with the sun out, guess we can't always have the perfect weather all the time or we would get spoiled....you ask what's wrong with that...lol! (or at least I do...ha!)

For lunch today I made us another one of Hungry Girl's recipes from here. Just scroll down it was the last one. Grilled Ham and Cheese Waffle 'wich!

2 low-fat waffles, thawed from frozen (we used gluten-free)
1 oz. sliced 97 - 98% fat-free ham (about 2 slices) (we had turkey breast)
1 slice fat-free American cheese (we used Galaxy veggie cheese)
1/2 tbsp. light whipped butter or light buttery spread (like Brummel and Brown), room temperature (this I just put on Cliff's sammie)

I just made the 'wich's up and put them on our George Foreman's grill and used it like a panini maker...so easy. I added to my 'wich...lol!: baby spinach, black olives, tomato, and spicy brown mustard....delish!

The tea towel being used as the backdrop came officially from Ireland! My mom and dad went years ago, and I decided it was high time to pull it out and get some beautiful use out of it! Love it!

Howdy Peeps, long time no blog, SO in your honor I made you Vegan Choccie Chip Cookies!

Close up....Yum!

Vegan Chocolate Chip Cookies

2 cups flour

2 tsp. baking powder

1/2 tsp salt

1/4 tsp cinnamon

1 tsp ground coffee

1/2 cup dark choc. chips

1 cup sugar (I used 3/4 cup stevia)

1/2 cup olive oil

1 tsp vanilla extract

1/4 cup water

1/4 cup shredded coconut

Throw all together in a bowl and oven is set at 350 degrees, scoop onto greased baking sheet. Bake for 15 mins, if using a large cookie scoop or 11 mins for small one.

Deviled Egg Container!

I decided that the deviled egg container needed to find another purpose if it was to keep residing in our residence, so it holds Protein Balls very nicely.

Raw Protein Balls

2 tablespoons of almond butter or organic natural peanut butter (no salt or sugar added) (I used 1/4 cup)

2 tablespoons of agave nectar (I used 1/4 cup)

1/2 cup of naturally flavoured vanilla protein powder sweetened with a natural sweetener. (Sun Warrior) (I used 1 cup)

2 tablespoons of organic shredded coconut (I used 1/4 cup)

You can also add 1 tablespoon of slivered almonds and 1 tbsp of raisins (I omitted the almonds and added 2 T. raisins)

*I also, added 3 medjool dates, 1 packet of stevia, and another 1/4 cup agave.....*I wanted to make this a bigger batch)

Mix all the ingredients well. (I used my Food Processor)

The balls should fit in the center of the palm of your hand

Put them into the fridge so they can set

Hemp Walnut Brownies

1 cup hemp seeds

1 cup raisins

2/3 cup dried shredded coconut

1 T. coconut oil

1/4 cup cacao powder

1/4 cup agave/honey

dash of salt

1/4 cup walnut pieces

Blend all ingredients in food processor (except walnuts) until the mixture forms a ball of dough. Press into an 8X8 pan. Press walnut pieces into the top of brownies. Chill, cut, and serve.

CSNstores Review and Cauliflower Pizza Crust

Finally, time for the review and a recipe! Remember when Caitlin from CSNstores contacted me and I chose to do a review, well the product I chose was Kathy Smith's Kettlebells. I love this all around package, you have two kettlebells (#3 lbs and #5 lbs), a dvd that has 4 workouts, and a nutrition guide if you would like to follow it! The guide does have some great information in it concerning the basics of eating a proper diet.

I love it when a workout dvd has a couple different routine's, that way you won't get bored and you can work different areas of the body. Don't think that this is a simple workout, it can kick some serious butt! The first time I did the one routine, I picked one that used the 5 lb kettlebell, now I work with 5 lb weights all the time, well swinging this weight has a total different feel then lifting it. The next couple of days I FELT it!...lol!

Now onto the Oopsie Rolls, these were really good for a low-carb roll and easy to make. Next time, have to make them taller and not pat down as much. The recipe can be found here. These are gluten-free also!

Corn Muffins and CSN Product Review Coming Soon

First up, I am really excited that Caitlin @ CSN Stores contacted me and I will be doing a product review for you all soon. As many of you may know CSN Stores carry everything from modern dining room furniture to fitness equipment, cooking, and they have 200+ online stores....mighty fine too!

Now onto the recipe! Haven't posted one in a while and these muffins were really good and healthy. Of course, I changed the recipe up a bit.

Corn Muffins

The recipe was on a Dannon Light & Fit yogurt container.

1 cup yellow cornmeal
1 cup all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 1/4 cups Dannon light & fit nonfat vanilla yogurt or 1 1/4 cups non-fat strawberry yogurt
1/4 cup canola oil (I used applesauce instead)

Preheat the oven to 375°F; lightly grease or line 12 2-inch muffin tins.
In a bowl whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt. In another bowl whisk together eggs, yogurt, and oil (applesauce); add yogurt mixture to flour mixture and stir until batter is combined. ***(Peeps, I just through this all in a bowl and combined)
Divide batter among the muffin tins, and bake on middle rack for 20 minutes or until tester comes out clean. ***(Since using applesauce, baking time would be 15-18 mins.....till tester comes out clean.)
Let muffins cool in the tins on a rack for 3 minutes, turn them out on to the rack and let cool completely. Muffins may be made 1 day in advance and kept in an airtight container. ****(These muffins were better the second day)

Happy 2011 Everyone! Cliff and I have had a wonderful holiday season and I hope you did too! We did help with some excitement of the new arrivals of our friends Boer goat named Gracie. We just happened to be stopping over to drop off some of our wine we make and behold....babies were coming!....love that! Our friends still have five more does to kid so they are going to stay busy!

Pumpkin-White Chocolate Chip Dough Balls

I have been seeing a lot about these dough balls around the bloggies world, so I decided to make this recipe tonight! I really like this recipe, because they are not really sweet and sometimes that is the way to go, plus they are pretty healthy!

Do you like my hand model?....hubby just loves that part....ha! You know the part he likes best......yep!...the tasting!

I hope you give these a try! The recipe is from Tina!

Pumpkin-Chocolate Chip Dough Balls

Makes 1 dozen

Ingredients:

3/4 cup all-purpose flour
1/4 cup canned pumpkin
1/4 cup smooth peanut butter
1/2 cup powdered sugar
1/4 cup sugar
2 tbsp canola oil (I used olive oil)
1 tsp vanilla extract
1 tsp pumpkin pie spice
1/4 cup chocolate chips (I used the white choc. here)

Directions:

Preheat oven to 325*F.
Combine all ingredients in a large bowl; mix well. (Batter will seem dry at first, but just keep mixing.)
Coat a baking tray with non-stick cooking spray.
Roll batter into 1-inch balls.
Bake for 18-20 minutes.
Allow to cool before serving.

Cliff and I were driving into town the other day and this is what we seen in one of our neighbors yards.....a Snow Horse!.....It was so cute, we had to run back home and get the camera!

It was snowing also!

This is a snowflake that landed on the dash of our truck...so pretty, don't you think?

In this photo, we were driving to Columbus and there was a haze around the sun, so I snapped a picture of it through the windshield...very different!

Hey, how did you guy's get in here?....lol! Their waiting on their mama to feed them....look at little copy cat Lily (our black and white kitten)..ha ha!

Coconut Date Cookies

These were very tasty and quick to make! Sorry that mine look like something from outer space....ha ha! Next time, I'm going to bake them a little longer. A keeper for sure!

Coconut Date Cookies

Makes 12 cookies

Ingredients:

1 cup pitted dates (approximately 15-20 whole dates)

1/4 cup old-fashioned oats

1/2 cup shredded coconut

1 tsp baking powder

1 tsp vanilla

1/2 cup brown sugar

1 tbsp canola oil (I used olive oil)

1/4 cup soy milk (I used almond milk)

Directions:

Preheat oven to 350*F.
Put all ingredients in a blender/food processor and blend well until there are no large date pieces.
Portion mixture into 1 inch balls, place on greased cookie sheet, and flatten with the back of a spoon/spatula.
Bake for 10-12 minutes on 350 degrees.
Remove from oven and cool on cookie rack.
Store cookies in the refrigerator.

Option: Melt 1/4 cup of chocolate chips in the microwave. Using a fork dipped into the melted chocolate, drizzle on top of cookies. (Cookies should be cool).

On Wednesday evening, my sister and I decided to do some candy making....on the list to do was: buckeyes, turtles, and cashew nut clusters. Vicky and I had to get the party started right with a nice glass of wine.

I debated about making this post, but then again I wanted to be honest with myself, since this is a blog about life and my amazing journey. Since last week I have been lacking in my creativity zone, in other words, not doing anything to express my creative side and when this happens this energy can go in many other directions and not always the right direction. So this morning when I was choosing to overeat or emotionally overeat I wrote this letter to myself. Now maybe some of you can relate and others may not, which is fine. I just needed to put this out there for others and myself, just so that you know you are not alone!

The Letter:

"I get so discussed with myself for overeating, it brings me to tears to be treating my body like this and betraying my soul this way and I can't seem to stop it! I read books about the topic and sometimes I think I have the answers, but then it happens again. I wish I was a writer (published). It is so pathetic how I can't seem to even stop it, but at times I can. (I know this doesn't make sense) I feel like I should know better......which I should. I wonder will anything be easy or I should/could say come easy in my life (as a creative side of me) as I really want to write. Why should I have to take a class....you don't....read books and incorporate the information in. I'm what they call a binge eater and an emotional eater. It seems easier to just give in than to find the courage to beat it. OMG, Pam..do you know what you just wrote....get it together NOW!"

Birthday Celebration And A Tricycle

Last evening we went to celebrate my sister's birthday......we don't discuss age as we are all ageless...he he! My mom made the Snowball cake for Vicky, she said that was all that she wanted....easier said than done sometimes for mom. Mom ended up spilling a whole bag of sugar on the floor, but she is one darn great cook and baker though!

In this photo, I kept asking Vicky if she was ready for the photo and she was saying "NO", but look at my niece laughing her butt off....good times were had by all! Happy Birthday Sissy!

Tricycle.....do you remember your first one! This was Cliff's! He has a nephew that is turning one in January, so his mom asked Cliff to blast and paint it, as this is our business. Didn't it come out perfect? Cliff is an excellent blaster and painter, even though one day we hope to sell this operation and move onto something more fun and less hard work, but regardless, she is a beauty!

The How-To's Of A Stove Top Espresso Maker

I have finally experienced a Stove Top Espresso Coffee maker! I love trying new things out and especially when they do turn out. Hubby and I went to Goodwill yesterday and found this little gem for $3.00 and it was hardly used. You can usually pick up some very nice things at those stores, heck my sister is a Goodwill Queen I think.....I will always ask her "where did you get that" and her reply...Goodwill...lol! The brand was Laroma Supreme....so here is a pictorial of what I did to make a great cup of espresso.

This is the finished product I am enjoying in my favorite goat mug! I added a 1/4 cup eggnog and a packet of stevia.

Add your cold water just to the steam vent. (Chefs say that cold water heats up faster than hot water....weird, but true) Place your filter funnel into the water basin.

Here's the good stuff now.....whatever kind of finely ground espresso you would like place it in the filter, but don't press it in.

Now put your two pieces back together...the water basin and coffee pot and place on the stove. We have an electric stove, so I turned the burner onto 4.5.

And within a couple of mins....fresh espresso! Pour and Enjoy!

Good Morning! Hope all is bright and cheery in your world and it is back to Monday again. So Happy Monday to you! Hubby and I had a wonderful holiday and I had a great time with my sissy in Fla. too! We hadn't taken a vacation together in some time.....good bonding fun!

I have some news....after some careful thinking I have decided to create a new blog! This blog here I am going to import over to my new one whenever it decides to let me do it....puter's....jeez..sometimes...lol! The new blog will have no labels, limitations, etc. when it comes to food....so it will not just be vegan or rawfood even though I will be incorporating them in also! Hubby and I felt that it was time to have other kinds of proteins into our meal plans and other things too. So we will be eating as healthy as we feel possible for us. This new blog will not just be focused on food, but travel, pets, life, relationships.....whatever comes to me and that I can express, create, and have fun with. With this blog I have had fun, but just felt very limited! Flourless Peanut Butter Cookies

Howdy! Here to share with you a very good and easy cookie recipe! Just take 1 cup sugar, 1 cup peanut butter, and 1 egg or egg replacer and combine together. I use a cookie scoop and drop onto a greased cookie sheet. Bake at 350 for 10 mins......YUMMY!

Skinny Pumpkin Spiced Latte

Servings: 2 • Serving Size: 1 latte • Weight Watcher Points: 2 pts
Calories: 115.6 • Fat: 0.4 g • Protein: 6.6 g • Carb: 20.8 g • Fiber: 0.7 g

Adapted from The Kitchn

1 1/2 cups fat free milk (I used almond milk)
2 tbsp pumpkin butter (I used Trader Joe's)
2 tsp vanilla extract
1/2 tsp pumpkin pie spice
2 tsp sugar or sugar substitute (to taste) (I used Stevia)
1/4 cup of espresso (or 1/2 cup strong brewed coffee works...I used this!)
fat free whipped topping.....(omitted)
pumpkin pie spice for topping

In a small pan combine milk, pumpkin butter and sugar and cook on medium heat, stirring, until boiling. Remove from heat, stir in vanilla. Using an immersion blender, blend until smooth (or whisk well with a wire whisk)

Pour into two mugs, add the hot espresso and top with fat free whipped cream and a dash of pumpkin pie spice on top.

Pam's Notes: I put all this in the blender and added some ice....came out yummy and frothy!

Our new addition: Meet Diamond "Lily"....our diamond in the rough!...he he! On the eve of my birthday (Oct. 13th) we were coming back from dinner on a busy highway and found her on the berm of the road. She was so scared and hungry, but happy now....warm, energized, and full of life!

Raw Chewy Apricot Macaroons

Raw Chewy Apricot Macaroons (Raw Energy by Stephanie Tourles)

1.5 cups dried apricots

3 cups unsweetened finely shredded coconut

pinch of sea salt

Soak apricots for 4 hours in enough water to cover by 2".

Drain and blend the apricots, coconut, and salt in the food processor till a stiff moist dough forms, about 60 seconds.

Place in medium bowl. Roll the dough into balls (1.5" diameter) flatten slightly (if you choose). Place on mesh screen and dehydrate 115 degrees, 18-22 hours till quite firm and slightly crispy on the outside and chewy on the inside.

Recipe first: Fruit and Nut Energy Bars by Joshua Drage from http://www.foodandwine.com!

1 CUP KAMUT FLAKES
1 cup pecans
1/2 cup salted roasted cashews
1/2 cup agave nectar
1/4 cup smooth peanut butter
5 dried figs, stemmed and quartered
1 tablespoon flax seeds
1 tablespoon canola oil
Finely grated zest of 1 lemon
1 cup dried blueberries or currants
1/2 cup unsweetened coconut flakes

Preheat the oven to 325°. Line a large baking sheet with parchment paper. In a food processor, pulse the kamut, pecans, cashews, agave nectar, peanut butter, figs, flax seeds, canola oil and lemon zest until coarsely chopped. Add the blueberries and coconut and pulse just until incorporated.

Scrape the mixture into a large bowl and stir well. Form the mixture into 12 bars or rounds, 3/4 inch thick, and arrange them on the prepared baking sheet 1 inch apart. Bake for 25 minutes, until the bars are browned around the edges. Let the bars cool completely on the baking sheet before serving.

MAKE AHEAD
The fruit-and-nut bars can be stored in an airtight container for up to 5 days.

Pam's notes: I used oatmeal instead of the kamut flakes, macadamia nuts instead of the cashews, raisins instead of the figs, olive oil instead of canola oil, for the blueberries, I just had a mixture left of some dried cranberries and seeds..so I used this. Just play around with it..you can do so many things and combo's with this recipe...thank you Joshua!

1/2	cup vegetable oil (I used applesauce, unsweetened)
2	eggs, (I used egg replacer)
1	cup sweetened dried cranberries (I used fresh ones)
1/2	cup chopped pecans
	Coarse sugar, if desired

	About Concordance™

Heat oven to 400°F. Grease 12 regular-size muffin cups with shortening or line with paper baking cups.
In large bowl, mix flour, sugar, baking powder, cinnamon, ginger and salt. Stir in pumpkin, oil, eggs, cranberries and pecans just until moistened. Divide batter evenly among muffin cups. (I used an ice cream scoop to fill) Sprinkle coarse sugar evenly over batter in each cup.
Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Remove muffins from pan to cooling rack. Serve warm.

Had some leftover mix, so made a little loaf!

Almond Cranberry Bites

1/3 cup whole almonds (I used Trader Joe’s raw almond meal)
1/3 cup sugar (I used organic)
2/3 cup coarsely chopped dried cherries (I used fresh cranberries)

2 tablespoons canola oil (I used olive oil)
1 large egg white (I used egg replacer)
1/4 teaspoon vanilla extract

Heat oven to 350 degrees.

Place everything in a bowl and mix well.

Using a cookie scoop, scoop out onto greased cookie sheet or you can use parchment paper like I did!

Bake for 10-12 mins till bottom is slightly brown, tops will not brown.

Good afternoon! We are having the most gorgeous fall weather here in Ohio, hope you are having just as nice where you are! A few months back, (some of you already know this) hubby and I bought three little pygmy's....one boy (Sammie) and his two sisters (Sasha and Sierra)....I just wanted to share some pic's with you! Just love these little critter's, they are the BEST! Hope you enjoy them too!

Plate some spinach, brown and wild rice, dried cranberries, pecans, and mix in some of your favorite dressing. On the side, sautéed zucchini and scallions...so simple...yet satisfying!

I know that fall is right around the corner, so we had to have another swing at summer! Enter: Vegan Strawberry Shortcake from http://hellyeahitsvegan.com/......thank you!

Vegan Strawberry Shortcake

strawberries or your favorite ripe berries, sliced
vegan whipped cream

2 c flour
2 tbsp sugar
1 tsp baking powder
¼ c vegan margarine
½ c unflavored or vanilla soy milk
¼ c applesauce

Lightly grease a baking sheet and preheat oven to 425º. In a large mixing bowl, mix together flour, sugar and baking powder. Cut in margarine until pea-sized. Stir in applesauce and soy milk. Divide dough into 9 portions using an ice cream scoop, dropping them onto baking sheet. Bake for about 15 minutes, or until golden.

Slice off the top of each biscuit (or don’t) and add a dollop of of whipped cream. Top generously with berries, and remember why you love summer.

If you eat them straight out of the oven, be aware that the heat may melt the whipped cream, so the presentation may not hold for very long. That never deters me, though! If you somehow manage to have leftovers, briefly warm the biscuits in a conventional or toaster oven before serving.

So sorry..this one came out so dark....feast your eyes on the first one....lol! These tasted like cake or brownie batter with coconut....so good! A Keeper for Sure!

Coconut Chocolate No-bake Macaroons

Servings: yields about 40 macaroons

Preparation Time: 15 minutes
3 cups unsweetened dried coconut flakes
3/4 cup almond flour*
3/4 cup cocoa powder
1 cup maple syrup
1/3 cup coconut oil, melted
1 tablespoon vanilla extract
1/2 teaspoon salt
Mix all ingredients together well. Form into small balls using a spoon or cookie scoop and refrigerate until firm.
*You can grind your own almond flour by placing whole almonds in a blender/food processor and blending until a fine meal.

Yield 3 cups

1 cup filtered water
1 frozen banana, chopped
1 cup frozen cherries
1/4 cup hemp protein powder (I used Jay Robb's Choc. Protein...1 packet)
2 tablespoons hemp seeds (I used 1/4 cup)
2 tablespoons raw chocolate powder (I omitted, was already using choc.)

Choco-Nutty Smoothie

2 scoops whatever kind of Choc. Protein Powder you would like (Vega is good)

1 banana

1/2 cup frozen blueberries

1 heaping T. almond butter

2 cups of whatever kind of milk (almond milk)

1 cup ice

*I also added a big handful of spinach*

Combine all and blend! Makes 2 large servings.

1 c. raw coconut oil

3/4 c. raw carob (or cocoa)

2 t. vanilla flavor

1 c. raisins, raw nuts, coconut, or whatever you want

Put the coconut oil in a bowl, Put this bowl in another bowl of hot water, When it's melted, stir in the carob to make it smooth, then stir in the other stuff. Spread on wax paper lined cookie sheet, put in fridge or freezer 5-10 minutes to make it hard. Break into pieces. The photo is from Rose....thank you Rose! (camera still out!) Cheesy Kale Chips

Cheesy Kale Chips

Two bunches of kale, washed, dried and stems removed (tear along stem to create medium size pieces)

Sauce:

Juice of two lemons
2 tablespoons nutritional yeast
1/2 teaspoon of salt
2 bell red bell peppers
1 cup cashews, soaked

Add all sauce ingredients in food processor. Process until you get a smooth/slightly griddy consistency. Massage sauce onto kale and dehydrate until crispy (8hrs roughly).
