Hubby and I took a jeep ride today and came across a place selling fresh strawberries, so we pulled right in there and picked up a quart. On the menu tonight was Paleo Strawberry Shortcake.
Paleo Strawberry Shortcake...Yumm!!
Here is the link to the recipe that I used: http://cookeatpaleo.com/paleo-strawberry-shortcake/
I didn't make the cream as you can see! Hugs!!

This is Tiger, one of our kitties enjoying the outdoors!
Primal Chocolate Chip Cookies
I made these into bars, instead of cookies! Much faster!!
The recipe comes from www.elanaspantry.com
Primal Chocolate Chip Cookies
2 cups almond flour
1/4 tsp. sea salt
1/2 tsp. baking soda
1/4 cup vegan palm oil shortening (I used coconut oil, soft, not melted)
2 T. honey
1 T. vanilla extract
1/2 cup semi-sweet chocolate chips
**I added some shredded coconut too.
I mixed it all up in a bowl and put it in a 8 X 8 glass dish. Baked at 350 degrees for 20 mins. Yumm!!
A lot of changes have taken place in May at Striker's barn, and not all that I have liked, of course, but in a perfect world, I would of made other changes instead.......
So...to start things off, I had posted about putting Chloe to sleep because of her not being able to get around and then bringing in the Boer. Then we bought Rose, a 3 yr young pygmy doe that lost her babies the last 2 years also, she is sweet! Taffeta wasn't getting along with her that well. Taffeta was the queen, but with her attitude we went and bought 2 Nigerian Dwarf wethers and the woman we bought them from gave us a free one to save it from the sale barns....thank YOU, Brenda!!
We get everyone home and think there will be peace in the barn once again.....NOPE...that would be too easy....Taffeta would not get along at all......just her nature and as much as I LOVED her, I knew it would never work out. Taffeta went back to Jill her previous owner, so now if Taffeta gets lonely, Jill is going to buy her a chicken.....
Now onto the photo's.....(yesterday I went out to take some other ones and the battery was dead in the camera.....got to buy a back up soon...battery that is..... ;)
Rose in the front and Taffeta in the back.....just love this photo. Really sad that it didn't work out with Taffeta!!
Now introducing the boys, we have had them for a week and they are 9 weeks young. The one on the left is Jasper with Moose.
and this is Jack
Moose and Jasper
Jasper, Moose trying to fly.... :) and Rose. Jack is in the background.
Rose has her moments with them, but we are trying to get them together to bond slowly.
Will post more photo's later!! Hugs!!

So we expanded the fencing yesterday to give the goaties more room to play!
This is Rolo, a 5 month Boer, that we borrowed from our friends till we can find a couple more pygmies to go with Taffeta.
Taffeta resting, I feel she is still grieving as I am. Chloe would of loved this area to roam around in, but she is there in spirit, I'm sure.
The old fence line.
New toys to play on.
Hello Taffeta, our sweet other girl! mwah!
Thursday, we are suppose to be going to look at another doe that is 3 yrs. of age. She cannot be bred also like Taffeta, as she has lost her babies the last two years. This doe is called Primrose or Rose for short, looks just like Taffeta, as she is coming from where Taffeta was born 8 yrs ago......small world!
A nice way to spend an afternoon or morning. :)
Peanut Butter Cookies
1 cup peanut butter or almond butter
1 cup honey
1 tsp baking soda
3/4 cup almond flour
Mix peanut butter and honey together, then add baking soda, almond flour, and egg.
Bake at 350 degrees for 10 mins.
Note: I made these big (like almost 1/4 cup batter/cookie), so that I could three-fold them to be like bars.
