Berry Cobbler

One 9 X 9" cobbler

Berry Mixture:

5-6 cups fresh or frozen berries..I used strawberries, blueberries, and peaches

1/4 cup whole wheat flour....I used gluten free

1/2 cup sugar


1 cup whole wheat flour...I used gluten free

2 T. sugar

1-1/2 tsp. baking powder

1/4 tsp. salt

2/3 cup milk....I used coconut

Preheat oven to 375 degrees.

Spread berries in a 9X9" greased baking dish. Mix in flour and sugar. Place in oven until hot, about 15 mins.

To prepare topping, mix flour, sugar, baking powder, and salt in a bowl. Add milk and stir until batter is smooth.

Spread evenly over hot berries (don't worry if they're not completely covered), then bake until golden brown, 25 to 30 mins. **I baked our's for about 40 mins.**

Meet Chloe and Taffeta!!

Today, was getting back into the Goatie and organizing the barn for our new arrivals that came this afternoon! Chloe is on the left and Taffeta is on the right! Now these girls come from very pure breed Pygmy stock, but we don't care anything about that, we just wanted some fun, happy, and adorable little friends to love on, and that is exactly what we got. Their previous Mama which was Jill was looking for a wonderful home for them, because they can't be bred anymore, as their last pregnancies didn't go so well!

Chloe is 7 and Taffeta is 6 yrs. of age. We just love how calm and sweet these girl's are.....we are very lucky to get them!

Here's Chloe, hopefully we can get some other photo's soon of them not behind the panel....they were kinda checking out everything going on today.

Enjoying their first dinner and did I mention they love animal crackers...he he.....go figure! :) I am so looking forward to some new and fun adventures with them....I love you girls and we just met! Hugs!

Broccoli Bake...A Recipe!

Broccoli Bake

12 oz Broccoli Florets
4 eggs
3/4 cup grated Veggie Mozzarella Cheese, or whatever kind you like
1/2 tsp Salt
1/2 tsp Nutmeg
1/2 tsp Mrs. Dash Spicy Seasoning
1 T. Coconut Oil
2 cups Coconut Milk, or whatever kind you like

Preheat oven to 350 degrees. Get out a square baking pan or round pie dish, and liberally grease with coconut oil. Microwave the broccoli till just tender, 4 mins. Mix together milk, eggs, cheese, salt, nutmeg, and Mrs. Dash till well mixed. Then add broccoli in and pour mixture into pan/dish. Bake til knife comes out clean, and cool slightly before serving.

Bake for about 30 - 40 mins. I enjoyed mine with A LOT of!

Winter Road Trip!

This afternoon, Cliff and I decided to take a ride to our local
ski lodge (Clearfork) that just opened back up after being closed
for 5 yrs. The new owner's put approx. 55 million into this new adventure. So, in other words....they need....SNOW!!! I was also
trying out my sister's camera to see if I would like it or not....I'm
getting ready to be in the market for a new one...yippee!!

First town up, was Bellville, Ohio. This was there gazebo in the
middle of town....cute!

At the resort in Butler, Ohio....and making SNOW!!

Making more....SNOW!!

They have a couple of beautiful ponds there!

The new lodge....see what 55 million looks like...he he! guessed right...making more SNOW!!! lol!

Cheesy Potato Soup....Anyone!!

This recipe comes from Betty Crocker: Slow Cooker Cheesy Potato Soup

The link is here. I didn't use my slower cooker, I just through everything in a pot and heated it up! Worked like a charm.....Mmmmm!

1 bag (32 oz) frozen southern-style diced hash brown potatoes, thawed
1/2 cup frozen chopped onion (from 12-oz bag), thawed
1 medium stalk celery, diced (1/2 cup)
1 carton (32-oz) Progresso chicken broth
1 cup water
3 tablespoons Gold Medal all-purpose flour
1 cup milk
1 bag (8 oz) shredded American-Cheddar cheese blend (2 cups)
1/4 cup real bacon pieces (from 2.8-oz package)
4 medium green onions, sliced (1/4 cup)

In 3 to 4 qt. slow cooker, mix potatoes, onion, celery, broth, and water.
Cover, cook on low heat setting 6 to 8 hours.
In small bowl, mix flour into milk, stir into potato mixture. Increase heat setting to high. Cover, cook 20 to 30 mins. or till mixture thickens. Stir in cheese until melted. Garnish individual servings with bacon and green onions. Sprinkle with pepper, if desired.

**Pam's notes: I used coconut flour for the flour, coconut milk for the milk, and Galaxy Veggie cheese shreds for the cheese, and I added some Tabasco sauce.**
