Honey Bear!

Paleo seems to be all the rage now, so I thought I would try this recipe!  The outcome was well...just okay and it would need to be kept in the frig, because I didn't and it molded within a couple of days.  Give it a try if ya like and let me know what your thoughts are....

Coconut Chocolate No-bake Macaroons

Servings: 40 macaroons

3 cups unsweetened dried coconut flakes
3/4 cup almond flour
3/4 cup cocoa powder
1 cup maple syrup
1/3 cup coconut oil, melted
1 T. vanilla extract
1/2 tsp. salt

Mix all ingredients together well.  Form into small balls using a spoon or cookie scoop and refrigerate until firm.

Gluten Free Baked Donut Holes

Last evening we were wanting a quick and healthy snack.  I've had this recipe for some time and was concerned about the coconut flour, because several things that I've made with it was dry, but this was not the case YUM!    Enjoy!!

Servings: 1 dozen donut holes
Servings: 1 dozen donut holes
Preparation Time: 5 minutes
Preheat oven to 350 degrees. Lightly grease a glass baking dish.
In a medium bowl, cream sugar, salt, butter and vanilla extract together with an electric hand mixer. Add egg and mix thoroughly.
Sift in coconut flour and stir to combine. Let dough sit for one minute. Shape dough into 12 1-inch balls. Place evenly on baking dish and bake for 15 minutes, or until golden.
Let cool and roll in powdered sugar or cocoa powder

Reading And Chocolate Fudge....Very Nice Combo!!

Went to Odd Lots a couple of weeks ago and picked up a couple of books for a few bucks...that's my kind of shopping.....:).   So far, it's a good read, but time will!

Served up with:

Chilled Raw Chocolate Fudge

1 cup almond butter or peanut butter
1/2 cup carob or cocoa powder
4 T. coconut butter
1/2 cup honey
1 tsp. vanilla
1/4 tsp. salt

Combine in Food Processor and put in glass dish. Freeze for one hour.
I added some sliced almonds, cacao nibs, goji berries, and sprinkled some coconut on top!
Mmmm!!!    Enjoy!!

Goatie Playtime and Our Pallet Garden!

We bought two new fans to put up in their stalls!

This year we are trying the pallet gardening!

This is the watermelon and radish's.

Next up, broccoli and skid, two kinds of tomatoes and brussels sprouts, and as of last night something got into our muskmelons....ugh...hope they enjoyed! So, we will have to replant!  In the flower pot is a strawberry plant from last year...yum yum!

We made planter boxes on the pergola and put lettuce and more radish's in them!

Bringing It Forward: Asian Waldorf Salad

Asian Waldorf Salad

Mix up in bowl; 1 chopped apple, 2 stalks celery; chopped, 1/4 cup chopped walnuts, sprinkle of grapes or raisins (I did grapes), add a little lemon juice so apples don't turn brown, and some chopped lettuce (the kind you like).

Nomi Shannon Asian Sauce/Dressing

4 T. Tamari or Nama Shoyu
1 T. grated ginger or 1/2 T. ginger powder
1 T. honey or more if you like it sweeter
pinch of each: cayenne pepper, ground cumin, and chinese 5-spice

Whisk all together and pour over salad. I let it sit in the frig. for about 15 mins. to blend the flavors together!.....enjoy!

This Is So Cool......

Baked Hard Boiled Eggs

Just put your raw eggs in the muffin tin. Put them in the oven at 325 degrees (Don't Preheat) for 30 minutes.

Fill a bowl with ice water and when the eggs are done, place them in the water for 10 minutes.

I peeled one right away and I was so amazed, this was the best tasting egg and OMG!!  so easy to peel, (which is a first) usually I fight with eggs to get this job done!

From now on this will be my method!

Berry Cobbler

One 9 X 9" cobbler

Berry Mixture:

5-6 cups fresh or frozen berries..I used strawberries, blueberries, and peaches

1/4 cup whole wheat flour....I used gluten free

1/2 cup sugar


1 cup whole wheat flour...I used gluten free

2 T. sugar

1-1/2 tsp. baking powder

1/4 tsp. salt

2/3 cup milk....I used coconut

Preheat oven to 375 degrees.

Spread berries in a 9X9" greased baking dish. Mix in flour and sugar. Place in oven until hot, about 15 mins.

To prepare topping, mix flour, sugar, baking powder, and salt in a bowl. Add milk and stir until batter is smooth.

Spread evenly over hot berries (don't worry if they're not completely covered), then bake until golden brown, 25 to 30 mins. **I baked our's for about 40 mins.**

Meet Chloe and Taffeta!!

Today, was getting back into the Goatie and organizing the barn for our new arrivals that came this afternoon! Chloe is on the left and Taffeta is on the right! Now these girls come from very pure breed Pygmy stock, but we don't care anything about that, we just wanted some fun, happy, and adorable little friends to love on, and that is exactly what we got. Their previous Mama which was Jill was looking for a wonderful home for them, because they can't be bred anymore, as their last pregnancies didn't go so well!

Chloe is 7 and Taffeta is 6 yrs. of age. We just love how calm and sweet these girl's are.....we are very lucky to get them!

Here's Chloe, hopefully we can get some other photo's soon of them not behind the panel....they were kinda checking out everything going on today.

Enjoying their first dinner and did I mention they love animal crackers...he he.....go figure! :) I am so looking forward to some new and fun adventures with them....I love you girls and we just met! Hugs!

Broccoli Bake...A Recipe!

Broccoli Bake

12 oz Broccoli Florets
4 eggs
3/4 cup grated Veggie Mozzarella Cheese, or whatever kind you like
1/2 tsp Salt
1/2 tsp Nutmeg
1/2 tsp Mrs. Dash Spicy Seasoning
1 T. Coconut Oil
2 cups Coconut Milk, or whatever kind you like

Preheat oven to 350 degrees. Get out a square baking pan or round pie dish, and liberally grease with coconut oil. Microwave the broccoli till just tender, 4 mins. Mix together milk, eggs, cheese, salt, nutmeg, and Mrs. Dash till well mixed. Then add broccoli in and pour mixture into pan/dish. Bake til knife comes out clean, and cool slightly before serving.

Bake for about 30 - 40 mins. I enjoyed mine with A LOT of!

Winter Road Trip!

This afternoon, Cliff and I decided to take a ride to our local
ski lodge (Clearfork) that just opened back up after being closed
for 5 yrs. The new owner's put approx. 55 million into this new adventure. So, in other words....they need....SNOW!!! I was also
trying out my sister's camera to see if I would like it or not....I'm
getting ready to be in the market for a new one...yippee!!

First town up, was Bellville, Ohio. This was there gazebo in the
middle of town....cute!

At the resort in Butler, Ohio....and making SNOW!!

They have a couple of beautiful ponds there!

The new lodge....see what 55 million looks like...he he! guessed right...making more SNOW!!! lol!

So, what did you do today? Whatever it was I hope you had fun!
